Lunch @ Fenix

Sunday provided us with a perfect day to start the second month of Spring - what better way to celebrate than with a leisurely lunch.

To help us along our way as we peruse the menu, a 1998 Yarrabank Cuvee Late Disgorged. It was disgorged in July 2006 - quite an elegant wine that even with 8 years on lees it remarkable didn't have an overly yeasty nose. Excellent persistent bead.

For lunch you can choose from a limited choice set menu or the traderne menu - we opt for the traderne with two of the days specials.

My thoughts:
The best part of a poached egg, is of course the runny yolk, so when you can have a perfectly cooked poached egg with runny white as well!!! Coupled with potato in three textures, mash, foam and tuille, complemented with sweet and sour............
This dish could sit anywhere in a meal, start middle or end.

Haalo's thoughts:
Stephen Downes rates the pork belly at Fenix as one of his "dishes to eat before you die". This is Raymond's 2006 incarnation of pork belly. This is a dish to impress - so many components, each matching perfectly to each other. This is a mathematicians delight as you work out the number of eating combinations that are possible. The long white element in the dish is a coconut noodle - formed by using agar agar, the noodle is a jelly. The two red domes are Nuoc Cham, traditional Vietnamese condiment. There's a salad of Asian herbs including Asian mint and coriander, also caramelised peanuts, fried shallots and crispy mulloway (these two elements sit on a thick laska sauce). It's deconstructed laska at it's best.

simple yet perfect - the scallops are coated with aoili and a light sprinkling of herbed breadcrumbs before being flashed under the grill - served warm

carrot cream, smashed peas, mint butter

To Drink: Noble Flight - red wine

Beautiful pea tasting peas, Lovely lump of rib eye (cooked medium rare), great loaf of potato (slow cooked in butter), no word in any language to describe the best tasting carrot treatment ever eaten.

white asparagus sorbet, sardines, barramundi

To Drink: Palo Cortado

Haalo's thoughts:
The white asparagus sorbet might seem a bit odd but it works. The sorbet melting almost immediately as it hits your mouth leaving only the essence of asparagus behind. Nasturtiums provide a peppery bite to the dish.

Side dish: Broad beans with peanuts and nasturtium oil
a generous serving of double shelled broad beans cooked in a little butter and tossed through a peanut and nasturtium oil dressing

brulee

A deconstructed brulee? With additions. A really nice desert, refreshing fruit and sorbet. Separating the toffee from the cream is inspired as it enables the use of different flavours. The strawberry toffee was especially good.

Haalo's thoughts:
There is an element missing from this photo - a small glass of juice that's meant to be drunk once you are finished, it's a combination of lime and cucumber juice, most refreshing and cleansing.

The vanilla mousse is presented as the speckled, white cord that runs the width of the dish. It's surrounded by varying sizes of mango air resembling eggyolks and cubes of cucumber and cucumber jelly - micro basil garnishes. A pale green quenelle of cucumber sorbet rests across the mousse, a smear of mango puree for highlight.

Dinner @ Fenix

After 5 weeks and a $700,000 renovation, Fenix has reopened it's doors. The menu divided in two - offering Degustation and Traderne (a la carte).

The meal begins with a liquid nitrogen palette cleanser - Caprioska flavoured meringue cooked in liquid nitrogen. No photo as it's eaten as soon as presented.

Butter - sprinkled with salt and thyme and a splash of olive oil.

chwix
Chwix
parfait of chicken livers, cocoa, salted lactose caramel, hazelnut biscotti, salad of beetroot

A play on a Twix bar - chicken liver parfait piped between wafers then dusted with cocoa, above it a strip of salted caramel. Cubes of just-cooked beetroot provide a counter to the rich parfait.

tomato

pressed tomato cylinder, basil ice cream, basil rocks, balsamic, caramelised olive tuile

This dish is inspired presenting us with the absolute essence of tomato and basil. This would have to rank as an ultimate way of presenting these often combined ingredients. Ripe tomato flesh has been layered and pressed to create an intensely flavoured cylinder of pure tomato.
The basil rocks lie under the basil ice cream, they provide a crunch to contrast the silky smoothness of the ice cream.

salmon

confit salmon belly & marron, avocado cream

Often ignored in Australia yet prized in Japan, this dish presents salmon belly at it's best. Utilising the rich fatty characters of belly it's "cooked" confit style. The resulting flesh just melts in your mouth - it's flesh remaining uncoloured by the confit process.

roasted melon, braised cabbage, verbena may-vin

Under a leaf and on top of a warm grilled slab of cantaloupe, sits the kidney and liver of the rabbit. A wedge of just braised cabbage is drizzled in a verbena sauce. Along with the rack of rabbit, two discs of rabbit saddle.

passionfruit sorbet, coconut dust, fried shallots, juice of beetroot and passionfruit

A most interesting combination to make you think - in a sauce of beetroot & passionfruit juice you'll find cubes of beetroot. The white powder isn't icing sugar but coconut dust. On top of quenelle of passionfruit sorbet are fried shallots.

Honey Puffs & Milk

The dish is presented without the honey puffs - they come separately in a small sealed plastic bag - you get to sprinkle them. The milk sorbet is especially interesting. It's simply churned milk but the result is an intensely flavoured sorbet, more milky than milk, it more closely resembles the intensity of evaporated milk.

chocolate
Chocolate served with Espresso-tini
basil oil and micro basil leaves, chocolate bark, chocolate mousse

This dish is served with an espresso-tini. The piped line of dark chocolate mousse is surrounded by various textures of chocolate - chocolate bark is brittle, chocolate rocks are crunchy. Instead of using mint, micro basil leaves and basil drops are used.

Vitello Tonnato
Thyme skewers of sliced Veal topped with Sterling Caviar and deep fried tuna mayonnaise

Tuna mayonnaise is crumbed and deep fried creating a package of contrasts - crisp and crunchy outside, runny inside. The caviar is quite a large sized black egg - just like the mayonnaise cubes burst in your mouth so too does the caviar. The veal is cooked pink and tender.

Shopping: Yarra Valley Dairy

There's been a few changes at Yarra Valley Dairy - the cafe/restaurant facilities were lost due to a need to expand their cheese making facilities.

You can still have coffee and sit down with a cheese platter but the main attraction is the ability to see and taste and most importantly, purchase their full range of products.

Inside this space you'll also find a "cellar door" (Yarra Valley Wine Hub) which specialises in single vine wines from the region along with other products made in the area.
