Although Paalo is not a huge lover of eggplant, he could easily have eaten an oven full of this parmigiana. The eggplant is sliced finely which gives it a much lighter texture - it's soft, cheesy and bursting with rich tomato flavours.

Battered Sage leaves with anchovies |
White anchovies are sandwiched between two sage leaves, battered and then deep fried - you'd think that with such strongly flavoured elements the end product would be overpowering but it isn't.

Polenta with Beans |
Borlotti beans have been tossed through polenta and allowed to set - it's then sliced and sauteed until golden and served with squacquerone cheese.

Saffron risotto serves as the base of this Arancino, stuffed with cheese and served with a rich meat ragu.
